
Yellow Lentil Dal

Peel the onion (1 small), cloves (2 garlic), and [a small piece of ginger] and chop them finely.

Heat the vegan butter (1 tbsp) (or [oil]) in a saucepan. Add chopped [onion], [garlic], and [ginger] along with the turmeric (0.5 tsp), coriander (0.5 tsp), cumin (0.5 tsp), chopped chili (0.25 tsp) (or 0.5 tsp paprika powder), and garam masala (0.25 tsp) (or curry powder). Sautée everything for about 5 minutes, stirring occasionally.

Add the vegetable broth (300 ml) and yellow lentils (150 g), bring to the boil, then reduce the heat and let it simmer for about 15 minutes.

As soon as the [lentils] absorbed most of the liquid, stir in the coconut milk (125 ml).

Season with lemon (0.5) juice, [pepper], [salt], and [a bit of sugar] to taste.

Allow to steam for a few minutes more, until the [lentils] are soft.

Add some more [water] or [coconut milk], as necessary.

Garnish with [fresh parsley], toasted [cashew nuts], and [chili] as desired.
