Instructions

    Stir in ground cumin (1 tsp), ground coriander (0.5 tsp), red chili powder (0.5 tsp), curry powder (2 tsp), garam masala (1 tsp), kosher salt (1 tsp), and black pepper (0.25 tsp). Toast for 30 to 60 seconds until fragrant.

    Pour in vegetable broth (2 cup) and scrape any browned bits from the bottom. Stir in the lentils and crushed tomatoes (14 oz). Reduce heat to low, cover, and simmer for 20 to 25 minutes until lentils are soft.
