Cook the pearl couscous (1 cup) according to package instructions, then drain.

Meanwhile, drizzle olive oil (0.042 cup) in a medium pan over medium-high heat. When hot, add the cooked chickpeas (2 cups), cherry tomatoes (2 cups), salt (0.5 tsp), and ground black pepper (0.25 tsp). Cook for 5-7 minutes, stirring occasionally. Remove from heat.

In a small bowl, mix together the ingredients for the dressing: extra-virgin olive oil (3 tbsp), red wine vinegar (3 tbsp), lemon (0.5 quantity), and sweet paprika powder (0.25 tsp).

To a large bowl, add the drained couscous, chickpea and tomato mixture, cucumber (0.5 quantity) slices, black olives (0.25 cup), fresh mint leaves (3 tbsp), fresh basil leaves (3 tbsp), and fresh parsley (2 tbsp). Add the dressing, toss to combine, sprinkle over the roasted almonds (0.25 cup), and enjoy!
