
Vegan Tofu Shawarma

Preheat oven to 450˚F. Line a baking sheet with parchment paper.

Shred the extra firm tofu (2 block) into pieces and place in a large bowl. Add olive oil (6 tbsp), lemon juice (4 tbsp), garlic cloves (4 clove) (minced), ground cumin (4 tsp), coriander ground (4 tsp), ground cardamom (4 tsp), smoked paprika (2 tsp), salt (1.5 tsp), cinnamon (1 tsp), black pepper (1 tsp), turmeric powder (1 tsp), and chilli flakes (0.5 tsp). Toss until well combined.

Spread the tofu mixture into a single layer on the prepared baking sheet. Bake for 25-30 minutes.

Serve the cooked tofu shawarma in [pita bread] with optional toppings like [cherry tomatoes] (halved), [mini cucumbers] (thinly sliced), and freshly prepared sumac onions and tahini sauce.

For the Sumac Onions: In a bowl, combine red onion (1 large) (thinly sliced), parsley (0.5 cup) (chopped), juice (1 lemon), olive oil (0.5 tbsp), sumac (1 tsp), and salt (0.5 tsp). Toss together and refrigerate for at least 20 minutes before serving.

For the Tahini Sauce: In a bowl, whisk together tahini (0.25 cup), garlic cloves (1 clove) (minced), juice (0.5 lemon), and salt (0.5 tsp). Gradually add [water] as needed until the sauce reaches a thin, drizzly consistency.
