
Vegan Shawarma
This vibrant Vegan Shawarma features marinated soy curls, fresh vegetables, and a creamy tahini sauce, all generously stuffed into soft flatbread. It's a flavorful and easy-to-make dish, perfect for a satisfying lunch or dinner.

In a large bowl, add the soy curls (4 ounces), then cover with warm water (3 cup). Let them rehydrate until softened. Drain in a colander and squeeze any excess water from the pieces.

In a large bowl, whisk together olive oil (0.25 cup), fresh lemon juice (3 tbsp), garlic (5.5 clove), salt (1 tsp), cardamom (1 tsp), ground cinnamon (0.25 tsp), paprika (1 tsp), ground cumin (0.5 tsp), and red pepper flakes (0.25 tsp). Add the soaked and drained [soy curls] and stir to coat. Cover and refrigerate.

After marinating, heat a large skillet over medium-high heat with a few tablespoons of [olive oil]. Add the marinated [soy curls] and fry until slightly blackened. Remove from heat.

Serve the [soy curls] in bread (4.5 pita) with [dill pickles], [sliced or quartered tomatoes], [lettuce], and [tahini sauce] or plain [vegan yogurt]. Enjoy!
