
Vegan Waldorf Salad
Creamy, refreshing, and perfectly balanced, this vibrant salad combines crisp apples, juicy grapes, crunchy walnuts, chickpeas, and optional celery, all tossed in a unique tofu-based dressing. It's a delicious and satisfying side or entree that's easy to prepare and perfect for any gathering.

Chop apples (2 cups), celery (1.5 cups), grapes (1.5 cups) and walnuts (1 cup).

Wash and dry the greens (12 oz) then cut or tear into bite-sized pieces, or line a bowl.

Blend firm tofu (8 oz), unsweetened non-dairy milk (0.33 cup), juice (1 lemon), maple syrup (1.5 tbsp), and salt (0.63 tsp) until smooth. If mixing greens in, combine all ingredients in one bowl.

If serving in a lined bowl, mix chopped ingredients and dressing in a separate bowl, then transfer to the lined bowl.

Refrigerate the salad for up to 3 days in the fridge. For best results, prepare no more than 12 hours in advance for events.
