Instructions

    In a medium pot over medium-high heat, stir olive oil (1 tbsp) and israeli couscous (2 cups) until lightly browned.

    Add vegetable broth (2 cups), bring to a boil, cover, and let simmer for 10 minutes.

    Once the [israeli couscous] has cooled, stir in the onion (0.25 red), olives (10 kalamata), cucumber (0.5), and cherry tomatoes (0.5 cup). Optionally, add [lemon juice] and [fresh parsley] to taste.
