
Crispy Tofu Stir Fry

Drain and wrap extra-firm tofu (2 block) in paper towels, pressing to remove excess moisture. Let sit for 10 minutes, then cut into 0.75-inch cubes.

Heat canola oil (1 tbsp) in a large wok over medium-high heat. Add tofu cubes and drizzle with soy sauce (1 tbsp). Sauté for about 10 minutes until browned on all sides.

Add garlic cloves (3 clove), most of the green onions (1 bunch), ginger (1 tbsp), sambal oelek (2 tsp), and the remaining soy sauce (2 tbsp). Stir and cook for 1 minute until fragrant.

Add baby spinach (10 oz) in handfuls, stirring until each batch is wilted. Stir in sesame seeds (2 tbsp) and sesame oil (2 tsp) then remove from heat.
