
Tofu Tacos
These tofu tacos feature a spiced Southwest tofu scramble with onion and garlic, wrapped in flour or corn tortillas, and topped off with your favorite additions. Enjoy them as vegan breakfast tacos or for brunch, lunch, or dinner that's ready in under 30 minutes!

Preheat oven to 375°F (190°C) and lightly grease a baking sheet.

Slice extra-firm tofu (14 ounce) into 1-inch cubes and bake for minutes (10).

In a food processor, combine baked tofu, chopped red onion (1 cup), bell pepper (0.5 red), garlic (2 clove), soy sauce (3 tbsp), cumin (1 tbsp), chili powder (1 tsp), [pinch smoked paprika], and [pinch salt]. Pulse until crumbled.

Heat neutral oil (1 tbsp) in a large pan over high heat. Add the tofu mixture. Cook for minutes (5), stirring frequently to prevent burning.

Toast the tortillas (8 corn) directly on a gas burner or in a pan.

Fill each tortilla with the tofu mixture. Garnish with chopped lettuce (1 handful) and diced tomatoes (1 cup).
