Instructions

    Preheat oven to 350°F (180°C) and line an 8x8 baking dish with parchment paper.

    In a large bowl, combine the dry ingredients: rolled oats (1 cup), oat flour (1 cup), baking powder (1 tsp), cinnamon (1 tsp), and salt (0.25 tsp).

    In a separate bowl, mash the bananas (2 ripe) and mix with soy milk (0.5 cup) and maple syrup (1.5 tbsp) until well combined.

    Pour the wet ingredients into the dry ingredients. Mix until a homogenous batter forms, then fold in walnuts (0.33 cup), dates (5), coconut flakes (0.25 cup), and chia seeds (2 tbsp).

    Spread the mixture evenly into the prepared baking dish. Bake for 18-20 minutes until the bars are firm and lightly golden.

    Remove from the oven and let cool on a rack for 10 minutes before slicing into 12 bars.
