
Vegan Oat Bars

In a large bowl, combine the dry ingredients: rolled oats (1 cup), oat flour (1 cup), baking powder (1 tsp), cinnamon (1 tsp), and salt (0.25 tsp).

In a separate bowl, mash the bananas (2 ripe) and mix with soy milk (0.5 cup) and maple syrup (1.5 tbsp) until well combined.

Pour the wet ingredients into the dry ingredients. Mix until a homogenous batter forms, then fold in walnuts (0.33 cup), dates (5), coconut flakes (0.25 cup), and chia seeds (2 tbsp).
