
Walnut Oat Scones
These hearty and wholesome walnut oat scones are a perfect addition to any breakfast spread or to enjoy alongside a cup of tea or coffee. This delightful treat combines the rich flavor of walnuts with the comforting texture of oats, all made with simple pantry staples.

Preheat the oven to 425 degrees F; spray cookie sheet with nonstick [cooking spray], or parchment paper or a silicone pad.

Mix together the plant milk (0.5 cup) and vinegar (1 teaspoon) and set aside.

Combine dry ingredients: rolled oats (1.75 cup), all purpose flour (0.75 cup), whole wheat flour (0.75 cup), granulated sugar (0.75 cup), baking powder (1 tbsp), baking soda (0.5 tsp), salt (0.5 tsp) and chopped walnuts (0.5 cup) in a large bowl, mix well.

Melt the plant butter (2 tbsp) and combine in a small bowl with the sour [plant milk], and canola oil (2 tbsp); add to dry ingredients and stir until just mixed.

Turn the dough onto a lightly floured surface and knead a few times to form into a ball; flatten the dough into an 8-inch-diameter circle and cut into eight wedges.

Sprinkle the brown sugar (0.25 cup) on top of the scones, place more [walnuts] on top.

Put the wedges on a prepared cookie sheet and bake for 12 to 15 minutes, until lightly browned. Cool slightly on a cooling rack.
