
Apple Pie Overnight Oats

Combine crisp, sweet apple, cut into small bite-size pieces (0.75 cup), ground cinnamon (0.75 tsp), maple syrup (1 tbsp), and sea salt (1 pinch) in a small saucepan. Cook covered on low, stirring occasionally, until apples are soft and tender.

Remove lid, increase heat to medium, and cook, stirring constantly, until liquid evaporates and a syrup forms around the apples. Set aside.

In a small bowl, whisk unsweetened plain almond milk (0.75 cup), chia seeds (1 tbsp), maple syrup (1 tbsp), ground cinnamon (0.5 tsp), creamy unsalted cashew or almond butter (2 tbsp), and vanilla extract (1 tsp). Stir in rolled oats (0.5 cup) until well-combined.

Layer a quarter of the cooked apple mixture into the bottom of each of two small mason jars or bowls. Add half the oats mixture to each as the middle layer, then divide and place the remaining apple mixture on top. Refrigerate overnight, or for at least 6 hours.
