
Apple Pie Overnight Oats

Cut just over half of the apple (1) into bite-sized cubes, and add these to a [medium pan]. Mince or grate the other half of the apple (1) and add to a [mason jar] or [airtight container].

To the [medium pan], add the water (1 tbsp), maple syrup (1 tbsp), and ground cinnamon (0.5 tsp). Cook over medium-high heat, and allow the apples to soften for about 8 minutes, stirring occasionally. Remove from the heat and let cool.

Add all of the other ingredients (excluding the cooked apple chunks) to the [mason jar], and mix to combine. Add the cooked [apple] chunks to the top. Cover and let it sit overnight in the fridge. The next morning, top with unsweetened coconut yogurt (0.33 cup) and enjoy!
