Tabbouleh Salad

This vibrant Middle Eastern tabbouleh salad is traditionally made with hearty bulgur, tomato, cucumber, and plenty of freshly chopped parsley, coriander, chives, and mint. This easy, healthy, and flavorful recipe takes just 30 minutes to prepare and can be enjoyed as a light meal or a refreshing side.

Instructions

    Combine the bulgur (50 g) and hot vegetable stock (200 ml) in a pan. Bring to a boil, then reduce heat and simmer for minutes (10). Remove from heat, cover, and let stand for minutes (15).

    Mix the cooked [bulgur] with the italian parsley (62 g), fresh coriander (31 g), fresh chives (15 g), fresh mint leaves (2 tbsp), spring onions (3 stalk), beef tomatoes (1 whole), cucumber (0.25 whole), lemon juice (1 fruit), lime juice (1 fruit), extra virgin olive oil (3 tbsp), and optional sumac (2 tsp). Season to taste with [salt].
