This vibrant tabbouleh features fresh lentils, sweet cherry tomatoes, aromatic flat-leaf parsley, and crisp spring onions. A healthy and flavorful side dish or light main.

Rinse the puy lentils (200 g), then cook in plenty of [salted water] until tender. Drain and cool.

Trim and finely slice the spring onions (1 bunch), halve the cherry tomatoes (200 g), then pick and finely chop the fresh parsley (1 bunch) and fresh mint (1 bunch).

Combine the cooled [puy lentils] with the [spring onions], [cherry tomatoes], [fresh parsley], [fresh mint], and extra-virgin olive oil (4 tbsp). Add the [lemon juice] to taste, season with [sea salt] and [black pepper], then serve.
