
Spicy Tomato Relish
This fiery tomato relish packs a punch with sweet red onions, cherry tomatoes, spicy ginger, and chilli. It's an ideal accompaniment for salads, sandwiches, or even your favourite curry. Prepare it in advance and store in the fridge for whenever you need a little something extra!

Heat the olive oil (4 tbsp) in a deep frying pan over a low heat. Add the onion (1 red), garlic cloves (1 clove), ginger (6 cm), leaf (1 bay), black peppercorn (1 tsp), anise (2 star) and chilli flakes (0.5 tsp); cook gently for 10 minutes, stirring occasionally.

Add the cherry tomatoes (750 g), red wine vinegar (4 tbsp) and soft brown sugar (3 tbsp) and salt (0.5 tsp). Increase the heat to high and cook, stirring regularly until the tomatoes have broken down and the sauce has thickened, leaving a clear trail when a spoon is drawn through it along the bottom of the pan.

Spoon into sterilised jars while hot (if not eating on the same day) or leave to cool before serving. Remove the whole spices before eating. Will keep for 2 weeks in the fridge.
