
Spicy Sweet Potato Chickpea Burgers

Bake, microwave, or boil potato (1 sweet) until tender.

Remove the skin and, using a food processor or blender, puree the potato (1 sweet) until smooth but thick.

Scoop out the potato (1 sweet) and add to a large mixing bowl.

Rinse chickpeas (2 cups), then add to the food processor. Pulse a few times to break up the beans, still leaving good texture. Add to the sweet potato.

Pulse old-fashioned rolled oats (1.5 cups) in your processor until flour-like, then add to the sweet potato mixture.

Sauté diced onion (0.5 cup), red bell pepper (0.5 cup), and diced celery (0.25 cup) in extra virgin olive oil (2 tsp) over medium-high heat for about minutes (7).

After about 7 minutes, add [1-2 cloves garlic] and continue to sauté until the vegetables are translucent and tender.

Once your vegetables are ready, transfer to the bowl with the sweet potato and add egg (1 flax) along with cajun seasoning blend (1.5 tbsp), garlic powder (0.25 tsp), cayenne (0.25 tsp), and [salt and pepper].

Cup each ball in your hands and squeeze, pressing it into a compact patty.
