
Spicy Roasted Nuts

Preheat oven to 325°F. Line a large rimmed baking sheet with parchment paper. Place whole almonds (2 cup), pecan halves (2 cup), and pepitas (1.5 cup) onto the pan.

In a small bowl, whisk together the fresh rosemary (2 tbsp), maple syrup (2 tbsp), plant based butter (2 tbsp), kosher salt (1.5 tsp), vanilla extract (1 tsp), and cayenne pepper (0.25 tsp) until combined.

Pour the glaze over the nut mixture on the baking sheet. Stir thoroughly until all items are lightly coated, then spread into a single layer.

Bake for 23 to 26 minutes, stirring after the first 10 minutes and then every 5 minutes. Roast until the nuts are deeply golden and the liquid is mostly absorbed.
