
Spicy Parsnip Crisps

Preheat your oven to 180°C (160°C fan). Use a mandolin or sharp knife to slice the parsnips (600 g) into very thin rounds.

Pat the slices dry with kitchen paper and place them in a large mixing bowl.

Drizzle with olive oil (2 tbsp) and toss with ground cumin (0.5 tsp), coriander ground (0.5 tsp), a smoked paprika (1 pinch), and seasoning (1 handful).

Arrange the slices in a single layer on baking sheets and roast for 20-25 minutes, turning frequently until golden.
