Slice or lebanese cucumbers (2 persian) in half lengthwise and then into julienne thin strips.

With your fingers, pull strings off the hearts of palm shreds (200 g) lengthwise (similar to string cheese). You can also slice into strips with a knife. Slice fresh or frozen mango (1 cup) into thin slices. Add all sliced ingredients to a large bowl.

In a small bowl, mix the dressing ingredients: vegan mayonnaise (3.5 tbsp), soy sauce (2.5 tsp), rice wine vinegar (1 tsp), and sriracha sauce (1 tsp). Adjust sriracha to your spice preference.

Pour the dressing over the salad ingredients in the large bowl and stir well until everything is nicely coated and creamy.

Divide the salad into [2] bowls. Top each with thin slices of avocado (0.5) and garnish with a sprinkle of toasted sesame seeds (2 tsp) and panko bread crumbs (2 tsp) for crunch.
