Spicy Spinach Tofu Stir Fry

This easy Spicy Spinach Tofu Stir Fry comes together in just 15 minutes in a single pot. Tofu is simmered in a rich spinach sauce with yogurt and Indian spices, perfect for a flavorful weeknight dinner. It's naturally gluten-free, nut-free, and has a soy-free option. Enjoy it with flatbreads, rice, or cauliflower rice for a low-carb meal.

Instructions

    Heat a medium to a large skillet over medium-high heat. Add the oil (2 tsp) and let it get hot.

    Add your pressed and cubed firm or extra firm tofu (7 oz) to the skillet and cook until some of the edges of the [tofu] are golden.

    Then add in the salt (0.125 tsp), black pepper, cayenne pepper, or red chili powder (0.25 tsp), 1 tsp Kashmiri garam masala (0.5 to), ground coriander (0.5 tsp), ground cumin (0.5 tsp), and any of the [good pinch cinnamon, clove, and cardamom] you are using and toss well to coat. Cook for another 1 minute to roast the spices as well.

    Then add in 10 oz frozen spinach (8 to), salt (0.5 tsp), garlic powder (0.5 tsp), onion flakes (1 tsp), ketchup or tomato paste (2 tbsp) and mix well. Cook until the [frozen spinach] is not frozen and doesn’t smell raw. 3-4 minutes.

    Then add in 4 tbsp vegan yogurt (3 to) and mix in. Add in water or non dairy milk (0.5 cup) and mix in and continue to cook for another 5 minutes. Reduce the heat to medium-low and simmer for another 3-4 minutes for the flavors to meld. Taste and adjust [salt] and flavor then take off the heat.

    Garnish with [pepper flakes], [lime juice] and [garam masala]. Optionally drizzle some [coconut cream] or thinned our [vegan yogurt]. Serve with flatbread, roti or naan, or rice. For low-carb, serve it with cauliflower rice.
