Heat the extra-virgin olive oil (2 tbsp) in a large cast-iron skillet over medium heat. Add the mixed mushrooms (16 oz), sea salt (0.25 tsp), and freshly ground [black pepper], then toss to coat. Cook without stirring for 2-3 minutes to achieve a nice golden-brown sear.

Shake the pan and continue cooking the mushrooms, stirring occasionally, until soft and well-browned (5-8 minutes). Reduce heat to low, stir in rice vinegar (1 tbsp), tamari (1 tbsp), and clove (1 garlic). Remove from heat and sprinkle with fresh tarragon (1 tbsp). Serve hot.
