Wipe the oyster mushrooms (150 g) with a damp paper towel to remove any dirt.

In a large bowl, combine the plain flour (1.5 cups), paprika powder (1.5 teaspoon), garlic powder (1.5 teaspoon), onion powder (1.5 teaspoon), turmeric powder (1 teaspoon), cayenne pepper (0.25 teaspoon), salt (1 teaspoon), and [cracked pepper]. Mix until well combined. This forms the dry mixture.

In a second bowl, take plain flour (0.5 cups) (from the dry mixture) and add water (0.75 cups). Whisk until a smooth batter consistency is achieved. This is the wet batter.

Dip each [oyster mushroom] into the wet batter mixture then into the remaining dry flour mixture. Double coat each mushroom back into the wet batter and then back in the dry flour mixture, ensuring they are fully coated.

Heat [oil for frying, canola oil] in a pot over high heat and carefully drop mushrooms into the oil one at a time in batches. Do not overcrowd the pot. Fry for minutes (3) until nice and golden on all sides.

Remove and place on paper towels to remove excess oil, then place on a cooling rack to keep crispy until the rest is done. Enjoy with your favourite dipping sauce.
