Heat vegetable oil (1 tbsp) in a large pan over high heat. Cook the firm tofu (8.8 oz), turning periodically, until golden on all sides.

Meanwhile, heat vegetable oil (1 tbsp) in a sauté pan over medium-high heat. Cook the onion (1 medium) for 3 minutes.

Add the grated fresh ginger (1 tbsp) and brown mustard seeds (1 tsp). Cook for 2 more minutes.

Add the tikka masala spice mix (2 tbsp), salt (0.5 tsp), and chili powder (0.25 tsp) and toast for another minute. The dish is spicy, so omit or add less chili if you're not a fan of heat.

Add the chopped tomato (1 large), vegan cooking cream (0.75 cup), unsweetened plant yogurt (0.5 cup), raw cashews (0.25 cup), and tomato paste (3 tbsp). Cook for 7 - 8 minutes.

Lastly, add the cooked firm tofu (8.8 oz) and stir it through.
