Instructions

  1. 1

In a small bowl, whisk together ground flaxseed (1 tbsp) and water (3 tbsp). Let it sit for 5 minutes until thickened into a gel.

  2. 2

Preheat your oven to 180C and line a large baking tray with parchment paper.

  3. 3

In a medium mixing bowl, whisk together the oat flour (2 cup), baking soda (0.5 tsp), and salt (0.5 tsp).

  4. 4

In a separate large bowl, cream together plant based butter (0.5 cup), brown sugar (0.5 cup), and white sugar (0.25 cup) until smooth. Stir in the prepared flax egg.

  5. 5

Gradually add the dry flour mixture into the wet ingredients, mixing until a dough forms. Fold in the dairy free chocolate chips (0.5 cup).

  6. 6

Scoop 12 even balls of dough onto the tray. Bake for 10 minutes or until the edges are golden brown.

  7. 7

Allow cookies to cool on the tray for 10 minutes before moving to a wire rack to cool completely.
