These hearty lentil sloppy joes are a quick, easy, and satisfying meal that reheats wonderfully for lunch. Enjoy them stuffed into whole-grain buns or open-faced with your favorite trimmings, like steamed greens or fresh corn.

Place water or low-sodium vegetable stock (1 cup) in a large pot.

Add the onion (1) and bell pepper (1 red) and cook, stirring occasionally until onions soften slightly, about 5 minutes.

Add the chili powder (1 tbsp) and mix in well. Add the remaining liquid, dried brown lentils (1.5 cups), diced fire roasted tomatoes (1 can), soy sauce (2 tbsp), dijon mustard (2 tbsp), brown sugar (2 tbsp), rice vinegar (1 tsp), vegan worcestershire sauce (1 tsp), and [salt to taste]. Mix well, bring to a boil, reduce heat, cover and cook over low heat for one hour, stirring occasionally.
