
Fudgy Vegan Brownies
These chocolatey vegan brownies are thick, chewy, and fudgy, offering a rich dessert experience with just a few ingredients. Perfectly easy to make and a hit with all ages, they are a delightful plant-based treat.

Preheat oven to 325°F/160°C.

Melt chocolate chips (1 cup) in microwave for minute (1), stirring. Repeat in 30-second increments until completely melted. Alternatively, melt over a small pot of boiling water in a heatproof bowl, stirring until melted.

In a medium bowl, whisk the all purpose flour (1 cup), sea salt (0.5 teaspoon) and baking soda (0.25 teaspoon) until combined. Set aside.

In a separate bowl, add the eggs (2 flax), brown sugar (0.75 cup) and melted coconut oil (0.5 cup). Mix vigorously for about minutes (2). Add the water (0.25 cup) and pure vanilla extract (1 teaspoon) and mix.

Add the dry mixture from earlier to the wet mixture along with the melted chocolate chips (1 cup) and stir for about minutes (3) until combined.

Stir in chocolate chips (1 cup). Pour into a greased, parchment-lined, or a greased foil-lined 8x8 square pan.

Bake for minutes (35).

When finished, remove from oven and allow to cool completely in the pan on a wire rack.
