
Fudgy Vegan Brownies
These thick, fudgy vegan brownies are a decadent treat made with simple, healthy ingredients. Free from dairy or eggs, they boast an outrageously chocolaty flavor that delights everyone.

In a large mixing bowl, stir together the all purpose flour (0.25 cup), white wheat flour (0.33 cup), granulated sugar (0.75 cup), cocoa powder (0.66 cup), baking powder (0.5 tsp), and kosher salt (0.25 tsp) until well combined.

Add the unsweetened applesauce (0.33 cup), coffee (0.33 cup), canola oil (0.25 cup), and pure vanilla extract (1 tsp). Whisk until smoothly combined.

Fold in the dark chocolate chips (0.75 cup). Scrape the batter into the prepared pan and smooth the top. Bake for mins (15), until the edges are set and the center looks slightly underbaked (a few moist crumbs are fine on a toothpick). Place the pan on a wire rack and let cool for at least mins (60) (tastes even better refrigerated overnight). Lift onto a cutting board using the parchment handles. Slice and serve.
