
Fudgy Two-Bite Brownies
These fudgy brownies are rich in chocolate flavor, moist, and delightfully chewy. The combination of nut butter and dates provides a perfect texture and rich taste, making them lovely, satisfying bites.

Line a mini muffin pan or lightly oil it. Preheat the oven to 180°C (350°F).

In a large bowl, combine the ground flax (1 tbsp) and soy milk (0.5 cup). Set aside.

Add the roasted hazelnuts (0.25 cup) and medjool dates (0.75 cup) to a food processor and blend until smooth.

Transfer the hazelnut-date mixture to the large bowl. Add cocoa powder (0.33 cup), almond butter (0.25 cup), vanilla extract (1 tsp), instant coffee (1 tsp) (optional), salt (0.25 tsp), and dark chocolate chips (0.33 cup). Mix until well combined.

Spoon 1 tablespoon of batter into each well of the muffin pan. Bake for 22-25 minutes, or until the top is firm and a toothpick comes out clean.
