
Classic Comforting Oatmeal
This comforting vegan oatmeal is everything a cozy breakfast should be. Creamy, wholesome, and warm, it features rolled oats simmered with soy milk, cinnamon, and bananas that naturally sweeten the dish as they dissolve. Topped with peanut butter, stewed berries, and crunchy seeds, it’s a filling and nutrient-dense way to start your day.

In a saucepan, combine the rolled oats (1 cup), soy milk (2 cup), ground cinnamon (0.75 tsp), pumpkin spice (0.125 tsp), and one sliced banana (1). Cook at a gentle simmer for 5 minutes, stirring often.

Add the second sliced banana (1) and ground flaxseed (2 tbsp). Cook for another 3 to 5 minutes until creamy. Add more milk if a thinner consistency is preferred.

Remove from heat and stir in pure vanilla extract (0.5 tsp). Plate the oatmeal and top with mixed berries (0.5 cup), peanut butter (2 tbsp), hemp seeds (1 tbsp), and pumpkin seeds (2 tbsp).
