Dice the medium tomatoes (3 firm) and place them in a bowl with olive oil (2 tbsp), fine sea salt (1 tsp), and ground black pepper (0.25 tsp). Toss to coat and set aside.

Slice the vegan focaccia loaf (1 loaf) and toast for about 3 minutes until golden. Brush the hot slices with the cut side of the garlic cloves (1 clove).

In a pot over medium-high heat, combine the balsamic vinegar (0.5 cup), sugar (2 tbsp), fine sea salt (0.5 tsp), and ground black pepper (0.25 tsp). Stir well.
