Combine chia seeds (1 tbsp), flaxseed meal (1 tbsp), rolled oats (1 cup), and oat flour (2 cups) in a medium mixing bowl. Add almond milk (1.5 cups) and let the mixture soak for at least 1 hour at room temperature (or refrigerate overnight).

Just before cooking, mix in the remaining ingredients: bananas, mashed (3 large), baking powder (2 tsp), baking soda (2 tsp), salt (1 tsp), pure vanilla extract (1 tsp), cinnamon (2 tsp), apple cider vinegar (1 tbsp), and maple syrup (3 tbsp). Stir until the batter is smooth.

Heat a large skillet or pancake griddle over medium heat (about 160C/325F) and lightly grease with oil. Pour 1/3 cup scoops of batter onto the griddle and spread with a spatula. Cook for 3 to 4 minutes per side until dark golden brown.
