
Zucchini Salad
This vibrant zucchini salad offers a delightful kick from fresh chillies, brightened by lemon juice. Simple to prepare, it's beautifully enhanced with extra virgin olive oil and fragrant basil, making it an excellent, healthy side or light meal.

Using a speed peeler, peel the courgettes (4) lengthways into long thin ribbons, then finely chop the red chillies (2 fresh) and add both to a bowl.

In a small jug, add the juice of the lemon (1) and top up with double the amount of extra virgin olive oil (4 tbsp).

Stir in the mustard powder (0.5 tsp) and a sea salt (1 pinch), then mix well and pour over the salad. Toss to coat, then pick and scatter over the fresh basil (0.25 bunch) leaves and serve immediately.
