Use a [vegetable peeler] to peel the zucchini (3) into thin strips. Place the [zucchini] in a large bowl, toss with drizzles of the lemon vinaigrette (0.5 cup) (which has the minced shallot (0.25 cup) mixed in), then transfer the [zucchini] to a platter.
