
Vegan Soy Curl Gyros
Satisfy your Greek food craving with these mouthwatering homemade vegan gyros! Stuffed with seasoned soy curls and fresh vegetables and topped with a creamy and bold plant-based tzatziki sauce, this healthy and flavorful dish is an excellent choice for a delicious vegan sandwich.

Place the soy curls (8 ounces) in a large bowl and add in the vegetable broth (4 cups), garlic (3 cloves), chili powder (1 tsp), oregano (2 tsp), salt (0.5 tsp), and ground cumin (2 tsp). Stir to combine everything and press the [soy curls] down into the liquid. Allow the [soy curls] to rehydrate.

Meanwhile, make the vegan tzatziki. Destem and finely chop the fresh dill (2 tbsp). In a small bowl, add the plain vegan yogurt (2 cups), chopped [dill], garlic (2 cloves), white vinegar (2 tsp), and [salt] to taste. Mix to combine.

Once the [soy curls] are fully hydrated, drain the excess [vegetable broth]. Heat up olive oil (1 tbsp) in a skillet over medium heat. Sauté the [soy curls] until browned and cooked through. Remove from heat and set aside.

To assemble the gyros, slice the tomatoes (2 roma) and onion (1 red). Warm the bread (6 pita) in a pan or oven. Assemble your gyros with head of lettuce (1 small), sliced [roma tomatoes], and sliced [red onion]. Top with the [soy curls] and drizzle with vegan tzatziki to finish. Serve immediately.
