
Sushi Rice Bowl with Sesame Soy Dressing
This vibrant vegan sushi rice bowl is quick and easy to prepare in under 30 minutes. It's crunchy, low carb, and drizzled with a divine sesame soy dressing, making it a perfect healthy lunch or dinner.

Mix all the ingredients (sesame oil (0.5 teaspoon), liquid aminos (1.5 tablespoons), water (1 teaspoon), rice wine vinegar (0.5 teaspoon), maple syrup (1 teaspoon)) in a jar with a lid by shaking vigorously. Shake again before pouring over. Use your desired amount.

Add all the ingredients (cauliflower rice (1 cup), cucumber (0.5), [a few slices sushi ginger], avocado (0.25), [3-5 crispy nori sheets], size carrot (1 medium), bell pepper (0.5 red)) to a bowl. Pour some of the sesame soy dressing over it (especially the [cauliflower rice]) and mix to combine. Enjoy!
