
General Tso's Soy Curls Stir-Fry

Mix the marinade with warm water (0.75 cup), sugar (3.5 tbsp), soy sauce (0.25 cup), mirin rice wine (2 tsp), rice vinegar (2.5 tbsp), toasted sesame oil (1.5 tsp), sambal oelek (2 tsp), ginger (2 tsp), and garlic (3 cloves). Reserve cup (0.5) of this mixture in a separate bowl. Add soy curls (4 oz) to the remaining marinade, mix, and soak for 10-15 minutes, tossing twice to ensure even marination.

Heat a skillet over medium-high heat, then add oil (1 tsp). Once hot, remove the soy curls (4 oz) from the marinade and add them to the pan. Cook for 4 to 5 minutes to brown some edges (optional: toss the marinated soy curls in [cornstarch] beforehand for extra crispness). In the last minute of cooking, add garlic (2 cloves) and green onions (0.25 cup).

Continue cooking until the [green onions] begin to turn translucent, adding oil (0.5 tsp) if needed. Add bell pepper (0.5 red), bell pepper (0.5 green), and zucchini (1 cup) to the pan and mix. Add a pinch of [salt] and cook for 2 minutes.

In the reserved marinade, add cornstarch (1 tbsp) and water (0.25 cup), then mix well.

Add the [marinade sauce mixture] to the pan and mix. Cover and cook for 3 to 4 minutes to thicken, stirring once halfway through. Taste and adjust flavor by adding [salt], [sugar], or [sambal oelek] if needed. Let sit covered for another minute.
