
Vegan Caesar Salad with Soy Curls
This refreshing and classic Caesar salad features crisp romaine lettuce, savory soy curl 'chicken', homemade croutons, and a creamy vegan dressing. It's a healthy and flavorful twist on a beloved classic that everyone will love.

In a blender or food processor, combine the ingredients for the Caesar Salad Dressing: vegan mayonnaise (0.5 cup), [juice of 0.5 lemon], cloves (3 garlic), vegan worcestershire (2 tablespoons), vegan parmesan (1.5 tablespoons), dijon mustard (2 tsp), capers (1 tsp), [salt] and [black pepper] to taste. Blend until completely smooth and refrigerate.

Preheat the oven to 375 degrees F (190 C).

Toss the bread (2 cups) cubes in olive oil (2 tablespoons), dried oregano (0.5 tsp), [salt], and [black pepper]. Spread in a single layer on a baking sheet. Bake for 12-15 minutes, or until golden brown and crunchy. Remove and set aside.

Place the soy curls (1 cup) in a small bowl and top with vegetable broth (1.5 cups). Allow the [soy curls] to rehydrate for 10-15 minutes.

Drain excess liquid from the rehydrated [soy curls]. Heat olive oil (2 tbsp) in a skillet over medium heat. Sauté the [soy curls] for 2-3 minutes. Add the nutritional yeast (1 tbsp), dried oregano (0.5 tsp), salt (0.25 tsp), dried sage (0.25 tsp), dried thyme (0.25 tsp), and [pinch of white pepper]. Continue to sauté until the [soy curls] are browned and cooked through. Remove from heat.

Assemble the salad by tossing the romaine lettuce (6 cups) in a large bowl with the prepared [Caesar Salad Dressing]. Top with the cooked [soy curls], [homemade croutons], and [vegan parmesan]. Serve immediately.
