
Vegan Collard Greens
This Southern-style Vegan Collard Greens recipe is packed with satisfying rich, savory, and smoky flavors. These tender greens are easy to make and serve as the perfect healthy side dish for your favorite main courses or enjoyed simply with cornbread.

Heat the oil (2 tbsp) over medium heat in a large heavy-bottomed pot, like a cast iron pot or Dutch oven.

Add the garlic (3 clove) and sauté on medium-low for 1-2 minutes or until golden.

Stir in the ripe tomatoes (2 juicy) and cook until soft, stirring occasionally, for about 3 minutes.

Add the collard greens (2 lb) and a sprinkle of [sea salt] and stir well. Reduce the heat to low and cover the greens. Cook until tender, about 30 minutes, or longer depending on your preference.

Turn off the flame. Stir in the tamari (2 tbsp) and smoked paprika (1 tsp), seasoning with additional to taste as needed. Serve.
