The base of this easy dressing is vegan Greek yogurt, making it healthier and high in protein. The secret to that tangy Caesar taste without anchovies is capers, bursting with salty, umami flavor. Add all of the dressing ingredients: vegan greek yogurt (1 cup), dijon mustard (1 tablespoon), [1-2 garlic cloves], capers (2 teaspoons), brine (0.5 teaspoon), vegan parmesan cheese (0.33 cup), fresh lemon juice (2 tablespoons), [1-2 tablespoons extra virgin olive oil], and a pinch of [to taste salt] and [to taste black pepper] to a blender or mini food processor. Blend until smooth. Start with extra virgin olive oil (1 tablespoon) and adjust for desired consistency. If not using a blender, finely chop the capers and grate the vegan parmesan, then whisk all ingredients together in a bowl.
