Instructions

    Add all of the dressing ingredients: vegan greek yogurt (1 cup), dijon mustard (1 tablespoon), [1-2 garlic cloves], capers (2 teaspoons), brine (0.5 teaspoon), vegan parmesan cheese (0.33 cup), fresh lemon juice (2 tablespoons), [1-2 tablespoons extra virgin olive oil], and a pinch of [to taste salt] and [to taste black pepper] to a blender or mini food processor. Blend until smooth. Start with extra virgin olive oil (1 tablespoon) and adjust for desired consistency. If not using a blender, finely chop the capers and grate the vegan parmesan, then whisk all ingredients together in a bowl.
