In a food processor, combine the red peppers (2 roasted), sun-dried tomatoes (0.33 cup), olive oil (0.25 cup), juice (2 lemon), garlic (1 clove), cumin (0.5 tsp), paprika (0.5 tsp), half of the toasted walnuts (1.33 cups) and a large pinch of both [kosher salt] and [black pepper]. Pulse until completely smooth and combined. Stir in the remaining [toasted walnuts].

Heat a small skillet over medium heat and add the cumin seeds (1 tsp). Cook, stirring often, until toasted, about 3-5 minutes.
