
Spiced Courgettes and Tomatoes
This vibrant side dish features courgettes and cherry tomatoes sautéed with cumin seeds, ginger, and a hint of chilli. It is a light, healthy, and aromatic accompaniment that pairs perfectly with any plant-based main or simple flatbreads. The addition of fresh lemon provides a zesty finish that balances the warm spices.

Heat the vegetable oil (2 tbsp) in a wok over medium heat. Add the cumin seeds (1 tsp) and chilli flakes (0.25 tsp); stir for 0.5 minutes until fragrant.

Add the sliced onion (2) and grated ginger (25 g). Gently cook for 5 minutes, stirring regularly, without allowing the onions to brown.

Turn the heat to high. Add the sliced courgette (500 g) and stir-fry for 3 minutes. Stir in the cherry tomatoes (200 g) and cook for another 3 minutes until they begin to soften but the courgettes still have a slight bite.
