Instructions

    Heat the olive oil (2 tsp) in a large pan over medium-high heat. Cook the onion (1 small), clove (1 garlic), and bell pepper (1 yellow) for 3 - 4 minutes, until softened.

    Add the cooked butter beans (1.5 cups), cherry tomatoes (0.75 cup), and harissa sauce (2 tbsp), and cook for 3 - 4 minutes. Deglaze the pan with some water if necessary.

    Season with salt (0.25 tsp) and ground black pepper (0.125 tsp), and stir in the lemon (0.5) juice.

    Divide the unsweetened coconut yogurt (0.5 cup) between your plates, top with the harissa beans, some avocado slices, and serve with pita breads (2 small). Enjoy!
