Preheat your oven to 350°F (175°C).

Lightly grease an 8½" x 4½" x 2½" loaf pan and set aside.

Boil the carrots until tender. Puree them in a food processor or blender, then measure out carrot puree (1 cup).

In a medium bowl, whisk together the whole wheat flour (1.25 cups), baking soda (1 tsp), salt (0.5 tsp), cinnamon (1 tsp), ginger (1 tsp), and nutmeg (1 dash).

In another bowl, prepare the flax eggs by mixing ground flaxseed meal (2 tbsp) with water (6 tbsp) and let sit for 5 minutes. Then whisk in the carrot puree (1 cup), coconut oil (0.33 cup), vanilla extract (1 tbsp), and maple syrup (0.75 cups) until well blended.

Add the dry ingredients to the wet mixture and mix gently until the batter is smooth. Stir in the unsweetened shredded coconut (2 tbsp) and walnut pieces (2 tbsp).

In a small bowl, mix together the topping ingredients: quick oats (2 tbsp), cinnamon (0.25 tsp), ginger (0.25 tsp), and maple syrup (2 tsp).

Pour the batter into the greased pan and evenly sprinkle the oatmeal topping mixture over it.
