
Smokey Lentil Stew with Aioli

Heat the vegetable oil (2 tbsp) in a large pot over medium-high heat. Add the onion (2 medium) and salt (0.5 tsp), and cook until lightly caramelized, about 15 minutes. Add splashes of [water] as needed to deglaze the pan.

Once caramelized, add the cloves (3 garlic), tomato paste (2 tbsp), smoked paprika powder (0.5 tbsp), and ground cumin (0.5 tbsp). Cook for 1 more minute. Stir throughout.

Add the remaining stew ingredients: vegetable broth (3 cup), kale (1.5 cup), cooked brown lentils (1 cup), basmati rice (0.33 cup), and optional dark soy sauce (2 tsp).

Cook uncovered at a simmer until the [basmati rice] is cooked through, around 15 minutes. Stir often. Taste and adjust the seasonings as needed.

Divide the stew into bowls and top off with dollops of vegan aioli (0.25 cup). Garnish with optional fresh dill (2 tbsp) as desired, and enjoy!
