
Red Wine Gravy
This rich and deeply flavored vegan red wine gravy is the perfect accompaniment for a Sunday roast or festive Christmas dinner. Made with a reduction of red wine, shallots, and aromatic star anise, it delivers a smooth and velvety texture with an intense umami punch.
Instructions

Heat the olive oil (1 tbsp) in a pan and fry the shallots (2) for 5 minutes until transparent.

Add the plain flour (3 tbsp) and tomato puree (2 tsp) and cook for 1 minute.

Gradually stir in the red wine (125 ml) followed by water (500 ml), whisking constantly until thickened and smooth.

Add the vegetable bouillon cube (1), star anise (1), tamari (2 tsp), redcurrant (2 tsp) and mixed herbs (1 pinch), then simmer gently for 5 minutes.

Strain through a sieve and serve hot.
