Peel the cloves (2 garlic). Add them with the roasted red peppers (1 cup), fresh basil leaves (1 cup), sun-dried tomatoes (0.5 cup), silken tofu (1 box), sunflower seeds (3 tbsp), [salt and pepper to taste], olive oil (2 tbsp) (optional), nutritional yeast (3 tbsp) (optional), and crushed red pepper flakes (0.5 tsp) (optional) to a food processor. Process until smooth or to your desired consistency. Set aside.

Cook the pasta of choice (1 pound) according to package instructions (approx. 10 minutes). Drain and quickly return the hot pasta to the pot.

Immediately add the red pesto sauce to the pasta and mix well. Optionally, mix in some reserved pasta water for a smoother/thinner sauce. Serve immediately and garnish with chopped [parsley].
