Instructions

    Place the red lentils (1 cup) in a bowl and cover with water. Soak for at least 6 hours or overnight.

    Drain and rinse the lentils. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.

    Add the lentils and water (0.5 cup) to a blender and blend until smooth. Pulse in garlic cloves (1 clove), salt (1 tsp), and baking powder (0.5 tsp).

    Drizzle olive oil (1 tbsp) on the parchment paper. Pour the batter onto the sheet and spread with a spatula until 0.25-inch thick. Drizzle with the remaining olive oil (1 tbsp).

    Top with vegan pesto (2 tbsp), mixed greens (1 handful), Carrot (1 handful), and vegan feta cheese (50 g). Slice and serve.
