
Red Lentil Pizza Crust
This easy homemade red lentil pizza crust is a nutritional powerhouse, packed with plant-based protein and fiber. Naturally gluten-free and vegan, this simple base features a neutral flavor that pairs perfectly with any toppings. Whether used as a crispy pizza base or a soft flatbread to serve with soups and dips, it is a healthy, wholesome alternative to traditional dough.

Place the red lentils (1 cup) in a bowl and cover with water. Soak for at least 6 hours or overnight.

Drain and rinse the lentils. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.

Add the lentils and water (0.5 cup) to a blender and blend until smooth. Pulse in garlic cloves (1 clove), salt (1 tsp), and baking powder (0.5 tsp).

Drizzle olive oil (1 tbsp) on the parchment paper. Pour the batter onto the sheet and spread with a spatula until 0.25-inch thick. Drizzle with the remaining olive oil (1 tbsp).

Bake for 20 to 25 minutes or until the edges are golden and the crust is firm.

Top with vegan pesto (2 tbsp), mixed greens (1 handful), Carrot (1 handful), and vegan feta cheese (50 g). Slice and serve.
