
Puttanesca Tofu Scramble
This classic vegan scramble gets a Mediterranean makeover with the bold flavors of puttanesca. Featuring sautéed tofu with garlic, red pepper flakes, fresh tomatoes, herbs, olives, and capers, it's a quick and flavorful dish perfect for breakfast or any meal.

Preheat a large heavy bottomed pan over medium heat. Sauté the 8 cloves garlic (6 to) in the olive oil (2 tbsp) until lightly browned, being careful not to burn. This should take about 3 minutes. Add the red pepper flakes (0.5 tsp) and the extra firm tofu (1 lb) and sauté for approximately 10 minutes, until the extra firm tofu (1 lb) is browned. Add a little extra [olive oil] if necessary.

Mix in the tomatoes (4 roma), fresh thyme (2 tbsp), and fresh oregano (2 tbsp). Cook for about 5 minutes, until the tomatoes (4 roma) are slightly broken down but still mostly whole. Stir in the mixed olives (0.5 cup), capers (1 tbsp), and salt (0.25 tsp) to taste. Cook just until heated through.
