Instructions

    Cut the extra-firm tofu (14.5 oz) into cubes. Place them evenly on a cutting board lined with paper towels or a clean towel. Cover with a layer of paper towels, set a baking sheet on top and then something heavy (like a large book or cast iron skillet). Press for minutes (15) while you make the marinade.

    In a small bowl, combine low sodium soy sauce (4 tbsp), seasoned rice vinegar (3 tbsp), pure maple syrup (1 tbsp), toasted sesame oil (1 tsp), garlic cloves (2 clove), and fresh grated ginger (1 tbsp).

    Place the pressed [extra-firm tofu] cubes in a shallow dish. Pour the marinade over the tofu. Marinate for at least hour (1), covered, in the refrigerator for best results.

    Heat neutral oil (2.5 tbsp) in a large skillet (cast iron preferred) over medium-high heat. Remove [extra-firm tofu] from the marinade (do not discard marinade). Fry the tofu until golden brown on each side.

    Once browned, pour leftover marinade into the pan with the [extra-firm tofu] and stir to coat. The tofu will quickly absorb the sauce. Remove from heat and serve with [rice] and stir-fried vegetables like [baby bok choy], [mushrooms], and [carrots].

    Store leftover tofu in a covered container in the refrigerator for 3-4 days. Enjoy cold as a high protein snack or in sandwiches and salads.
